Mom says chili is an art, not a science. She is all about quick and easy meals, that you can “throw” together. While I think the idea of quick, the “throw” together part is hard for me, as I like the science of cooking. I want exact measurements, and directions.. But I am learning to let go,
Ingredients
1 pounds ground beef
4 cans spicy chili beans
1 can of Rotel diced tomatoes with green chili
Tomato juice or V-8 (you will add to the thickness you want)
2 yellow onions, diced
4 garlic cloves, minced
1 Tbsp Worcestershire sauce
1 Tbsp brown sugar
1 tsp chili powder
1/2 tsp cayenne pepper
1 1/2 tsp salt
Directions:
Brown the meat with the diced onion, drain off the fat, and place in the pot/dutch oven
Add beans, tomatoes, and juice to the thickness you want
(remember that it will get a bit juicer as you cook)
Add pepper, salt, garlic, Worcestershire sauce, brown sugar
if you want it spicy add cayenne (this girls like spicy chili)
Simmer on low, uncovered, for 3 hours.
