Good Morning! I am up early and working on my tailgate goodies…
Today I made two of my quick and easy favorites..
First up Hot-Wing Chicken Dip…
Preheat oven to 325 degrees.
Spray an 11″ glass baking dish with non-stick spray.
Combine these 3 and put in baking dish:
4 large cans chuck chicken in water [drained]
1 large bottle Frank’s Hit Sauce
1 large can “Original” Rotel Tomatoes
Combine these 3 and layer over the chicken:
1 large block [softened] Cream Cheese
1 large bottle Ranch dressing
1 large bag Shredded Cheddar Cheese
Bake 30 minutes.
I made it 3 layers, by holding out the cheddar cheese, adding as a top.You can also just put the cheddar cheese in the 2nd layer and call it a day
It is great to serve with either chips, or celery!!!
Next up… a simple pasta Salad
Cook 1 box of tri colored Rotini
While that is cooking combine
1 cucumber cut into quarters
1 small can of olives
1 box of cherry tomatoes cut into quarters
1 bottle of zesty Italian salad dressing
1 container of feta cheese
and a handful of diced red onions
I am sure that I have the exact measurements somewhere in my recipe book, but I make this for nearly every tailgate, thus I honestly just add a little of this and a little of that until it looks right. It is always a hit!
